Chicken and stuffing

This is a classic meal with a little extra. It's so simple and tastes amazing. With only 4 ingredients you can't go wrong.

Chicken and stuffing
4 chicken breasts
Package of chicken stuffing
Cream of chicken soup
1/2 cup sour cream
Place chicken in the bottom if slow cooker and pour stuffing on top.
In a bowl mix soup and sour cream along with 1/4 cup of water.
Pour over stuffing cover and cook for 4 hours

Yuuuummy! A must try

Forgotten chicken

This meal smelled so amazing and is so easy to make. The chicken just falls apart.

Forgotten chicken
4 chicken breasts
Cream of chicken soup
Cream of celery soup
Water
Onion soup mix
Minute rice 2 bags
Preheat 275 9x13 greased pan
In a bowl mix uncooked rice, soups, 2 can of water and pour in bottom of dish.
Place chicken on top and sprinkle onion soup mix on top
Cover and bake for 3 hours

This was a great dish and a must try!

Creamy chicken and wild rice soup

So making dinners aren't as easy as they used to be. With a 2 month old I have to work around his schedule. Which doesn't always work well with my plans for dinner. This meal only says to have in the crock pot for 6 hours (or high 4 hours) but who knows if I would be able to pull that time frame off. So I took the window of opportunity and he was asleep so I ended up having this soup in the crock pot for 10 hours. Didnt hurt anything but boy did it tease me all day!

Creamy chicken and wild rice soup
4 1/2 cups chicken broth
1 package rice a roni long grain and wild rice mix
1 cup diced celery
1 cup diced carrots
3 chicken breasts
1 cup water
1/2 cup (1 stick) butter
1/2 cup flour
1/2 tsp salt
1/2 tsp pepper
2 cups (1 pint) half n half
Combine broth, water, chicken, rice mix, celery and carrots in crock pot and cook for 6 hours.
Shred chicken
In small bowl combine flour salt and pepper.
In saucepan melt butter. Stir in flour mix a tablespoon at a time.
Whisk in half n half slowly.
Pour into crock pot and stir together.
Cook for 15 more mins

I think it could have used 2 boxes of the rice a roni but that's just me. If you like more rice then I would do that. Before you add the "creamy" it smells an looks jut like chicken noodle soup. So if your not about the creamy then just don't add the last part.

One pot pasta

What's better then only having to use one pot?! Well actually you need to dirty a bowl too but no big deal. I must forewarn though this "one pot" needs to be a BIG pot! I'm at the rim of the pot haha

One pot pasta
1 lb ground beef
8 oz package mushrooms- cut
Small onion- diced
2 cloves garlic - minced
2 24 oz jars spaghetti sauce
1 cup water
1 tbsp Italian seasoning
1/2 tsp salt
1/4 tsp pepper
20 oz package four cheese ravioli
Mozz cheese
Brown beef and drain
Put in a bowl off to the side.
Sauté mushrooms garlic and onions in oil.
Add beef, sauce, seasonings and water to pot and bring to a boil.
Add ravioli and reduce heat to medium low.
Cover and let simmer for 8-10 minutes stirring occasionally.
Top with cheese and serve.

I'm really liking these quick easy meals. And they are so good! The ravioli is a little pricy so if you want you could just add regular noodles because you add cheese at the end anyways.

Pizza stuffed chicken

This was a very easy meal that took no time to make. What more could you ask for!!

Pizza stuffed chicken
Can of pizza sauce
2 cups shredded mozzarella
1 clove garlic minced
4 chicken breasts
Italian seasoning
Salt and pepper
Pepperonis
375* any size baking dish greased
Mix sauce, mozz cheese and garlic in a bowl.
Lay out the chicken. Spread mixture on chicken and roll placing seam side down in dish.
Sprinkle seasoning and salt and pepper on top. Place pepperoni on top of chicken and spread rest of sauce on top.
Bake for 30-35 mins

This smelled so amazing and tasted great. You could add any of your favorite pizza toppings to this and it would still be great.

S'mores bark

This was a spur of the moment make. I saw the recipe on Pinterest the other day had the stuff and just made it. I added peanut butter chips because the chocolate wasn't enough.

Graham crackers
Mini marshmallows
Chocolate chips or melting chocolate
Peanut butter chips (optional)

Line a cookie sheet with parchment paper
Lay out your crackers and put marshmallows on top
Melt your chocolate and pour on top.
If using peanut butter melt down while adding a small amount of milk until smooth. Put on top.
Place in fridge until hardened

My parents put theirs in the microwave for 10 seconds to get the marshmallows soft and slightly melted. My fiancé says the peanut butter is almost like fudge because of the milk. Either way this is so simple to make and is a great way to bring a summer feel to winter!

Cheddar bacon ranch chicken pasta

What a name! Pretty much explains the whole thing! This was amazing but I slightly burnt the bacon. Hey I'm still learning!

Cheddar bacon ranch chicken pasta
2 boneless chicken breast- bite size
Penne pasta
Dry ranch packet
2 tbsps flour
2 cups milk
Shredded cheddar
Bacon
1 tbsp butter
Cook your pasta and drain
Cook bacon but don't throw away drippings.
Throw the chicken right into the drippings with butter and cook till tender.
Add flour and ranch packet. Stir frequently.
Stir in milk and stir occasionally till thick and bubbly.
Stir in cheese and bacon until cheese is melted.
Add pasta and serve!

Other then cooking the pasta this is a one dish meal! Hello how awesome is that. Less dishes is always good in my book. The drippings might look like a lot but don't drain. It adds so much flavor. For sure not the healthiest meal but come on you don't always have to eat healthy.

Italian chicken casserole

2 tbsp olive oil
1 cup onion chopped
3 cloves garlic minced
3 cups cubed cooked chicken
2 cans diced tomatoes
1 cup heavy cream
3 oz cream cheese
2 cups shredded mozz cheese
Spaghetti noodles
350* 9x13 greased
Cook noodles and drain.
Sauté onions and garlic in oil.
Stir in chicken, tomatoes and cream. Bring to boil over medium high heat.
Reduce heat and simmer for 10 mins.
Add cream cheese an 1 cup mozz cheese stirring constantly till melted.
Place pasta on baking dish.
Spoon mixture in top
Top with remaining cheese
Bake for 30 mins

Quick simple meal that deff pleases. A must try!

Broccoli cheddar rice

If you read my post "outback chicken" this is what I served with it. It was sooo good! You have to try this even if you don't like broccoli. Just suck it up and eat it haha no I'm just kidding but really you gotta try this.

Broccoli cheddar rice
4 tbsp butter
4 cloves garlic minced
1/4 cup flour
2 cups milk
1 tsp Dijon mustard
1/2 tsp sea salt
2 1/2 cups cheddar cheese ( that's a bag and a half)
1/3 cup Parmesan cheese
3 cups cooked rice
2-3 cups cooked broccoli
400* 9x13 greased
In a large saucepan melt butter over low heat. Add garlic and sauté.
Which in flour and cook 3-4 mins whisking constantly.
Slowly whisk in milk , mustard, salt and pepper. Being to simmer an whisk occasionally for 4 mins.
Add 2 cups of cheddar cheese and Parmesan cheese until mostly melted.
Remove from heat an stir in rice and broccoli.
Pour into baking dish and cover with remaining cheese.
Bake 30 mins
Allow to sit for 5 mins.

You can use fresh broccoli or frozen doesn't matter. I used fresh to cook that I just googled how to. I don't fully remember but I think just put in microwave safe dish with a couple tsps of water for a few mins. But you'll want to look it up to be sure. Such a good side dish!

Outback chicken

This was the first meal I made since having my son. And it was a hit I think my dad even licked the plate clean. There was one piece left and he ate it for dinner the next day. The recipe calls for mushrooms we didn't have any and it was still good.

Outback chicken
4 boneless chicken breasts
Seasoning salt
Bacon
1/4 cup mustard
1/3 cup honey
1 cup mushrooms
2 tsp dried onion flakes
2 tbsp mayo
2 cups shredded cheddar
350* 9x13 greased
Sprinkle seasoning salt on chicken and fridge for 30 mins.
Cook bacon and save the grease.
Sauté chicken in bacon grease until brown.
Place chicken in dish
In a bowl mix mustard, honey, mayo and onion flakes. Spread mix over chicken.
Layer bacon, mushrooms and shredded cheese on top of chicken.
Bake for 30 mins

My mom suggested crumbling the bacon for on top instead of laying the full strips on top. Either way it's still good. I served this with broccoli cheddar rice. Which I will post the recipe for that!

Million dollar spaghetti

So I was supposed to make this the other day but then after browning the meat I realized we didn't have spaghetti sauce! Thus leading to the crunchwrap supreme. So I finally got to make this. If your a fan of spaghetti and lasagna then this is your dish!

Million dollar spaghetti
Spaghetti noodles
1 lb ground beef
24 oz jar spaghetti sauce
1/4 cup sour cream
8 oz cream cheese
Small tub of cottage cheese
Stick of butter
Shredded cheddar cheese
350* 9x13 greased dish
Cook your noodles and drain
Brown your hamburger; drain and add sauce.
In a bowl mix sour cream, cream cheese and cottage cheese. Make sure to mix well ( helps if you take the cream cheese out a little early)
In dish add a few slices of butter ok bottom.
Then add half noodles, cheese mixture, noodles, slices of butter, meat.
Cover and bake for 30 mins.
Uncover sprinkle cheddar cheese on top and bake for 15 mins

This comes out bubbling hot so make sure you let this rest for a few mins before you serve it. Don't need anyone burning themselves now!! Serve with some garlic bread and you got your self a nice meal!

Crunch wrap supreme

So we love Mexican food. My fiancé loves taco bells crunchwrap supremes but I despise toxic hell. In my opinion that place should be shut down its so nasty. So I set off to find a at home recipe that will taste just like it.

Crunch wrap supreme
Large tortilla shells
1 lb ground beef
Taco seasoning
Sour cream
Bite size tortilla chips
Taco cheese
Lettuce
Tomato
Brown you beef and drain. Add taco seasoning.
Heat your shells in the microwave so they are easy to work with.
Spread sour cream on shell the add ground beef, cheese, tortilla chips, tomato and lettuce.
Start folding the edges it will not completely cover.
Place open side down on hot skillet and heat for just a few seconds on each side.

It doesn't take long to burn as you can see started to happen on the one in the picture. But I succeeded in making close the real thing. Nacho cheese was suggested instead of the shredded taco cheese. Enjoy!

Meaty manicotti

This is a dish that's like stuffed shells. A great Italian meal and very filling. This does take some prep time so make sure to leave yourself enough time for that.

Meaty manicotti
14 manicotti noodles
1 lb ground beef
1 lb Italian sausage
2 cloves of garlic minced
8 oz cream cheese cubed
2 cups shredded mozz cheese
1/4 tsp salt
Spaghetti sauce
Parmesan cheese
350* 9x13 greased
Brown your beef and sausage together add garlic and drain.
Meanwhile cook noodles to package directions and drain and rinse in cold water.
In bowl add cream cheese, mozz cheese and salt. Add meat mixture and mix well.
Pour enough sauce in the bottom of the pan to cover bottom.
Stuff shells with meat mixture and place in dish.
Pour remaining sauce on top and sprinkle Parmesan cheese on top.
Bake covered for 40 mins. Uncover and continue baking for 5-10 mins

You are not going to be sorry you tried this dish. It's worth all the work I promise.

Parmesan crusted chicken and pierogi casserole

This is a two for recipe! Both are so simple and can be made at the same time. I had my baby boy mason 3 weeks ago so I have been a little behind on posting my dinners. I will be catching up shortly. For now here is my dinner I made tonight.

Parmesan crusted chicken
Boneless chicken breast
1/4 cup Parmesan cheese
1/2 cup mayo
Italian breadcrumbs
425* any sized baking dish greased
Mix the mayo and cheese together in a small bowl.
Place chicken in dish and spread mayo mixture on top.
Sprinkle breadcrumbs on top
Bake 25 mins

Pierogi casserole
Frozen pierogis
1/3 cup cream cheese
1/2 cup chicken broth
Shredded cheddar
Bacon bits
425* 9x13 greased
In small sauce pan mix chicken broth and cream cheese stir frequently until cheese is melted.
Arrange pierogis on bottom of dish.
Pour cheese on top
Cover with shredded cheddar
Bake for 25 mins
Garnish with bacon bits.

So this was a perfect quick easy dish to make and was very good. I hope you enjoy!

Ultimate baked beans

Gotta have a throw back to summer by having hot dogs and baked beans. But not just any baked beans. Ultimate ones! Ones you just can't get enough of and these are them!

Ultimate baked beans
2 cans of pork and beans
1/2 cup brown sugar
1/2 cup water
1/2 cup ketchup
2 tbsp mustard
1 tbsp white vinegar
1 envelope onion soup mix
1 lb ground beef browned and drained
1 lb bacon most cooked
Preheat oven to 350 and grease a 9x13 pan
Combine all ingredients except bacon.
Spread out in dish and place bacon on top.
Cover and bake for 30 mins
Uncover and continue to bake for 15 mins

My mom said that the only thing she would change was to cut the bacon up and place on top instead of the strips. They were a little hard to cut up once they were baked on top. But this was for sure a winner. Next summer out first picnic I will be busting out this recipe again.

Cheese tortellini soup

It's fall so it's time for soup! And tortellinis are soooo good! This soup is so easy and quick to make that it almost seems like you missed a step.

Cheese tortellini soup
10oz tortellini noodles
10oz can diced tomatoes with juice
3 sprigs of thyme
Large carrot peeled and chopped
2 celery stalks chopped
4 cups vegetable broth
3/4 cup onion
2 garlic clove
In large pot heat oil on medium high and add celery and carrots. Cool for 2-3 minutes.
Add onions and garlic and cook for another 2-3 minutes.
Add tomatoes with juice, thyme and broth and bring to a boil.
Add tortellini and cook to package directions.
Remove from heat an serve!

See isn't that so easy! It felt weird knowing I was going to make soup for dinner but not starting to make it till last minute! But if your in a time crunch then this is perfect for you!

Monte crisco

So today I went down the easy road. Actually this was just common knowledge I didn't need to get this recipe off Pinterest. My mom and I are huge fans of them and I have been in a lazy mood so these were perfect.

Monte crisco
Bread
Turkey lunch meat
Ham lunch meat
Swiss cheese
Eggs

You want to make 3 pieces of French toast.
And then you layer:
Bread-turkey-cheese-bread-ham-cheese-bread
If you want your cheese melted you can either throw it back in the skillet or use a sandwich press like I did.

My mom likes to dip hers in maple syrup but usually it's served with a honey mustard dip. I served mine with tater tots as you can see because they are simply amazing and you can never have too many!

Chicken and dumplings casserole

This isn't your mommas chicken and dumplings. But boy did it give it a run for its money! It takes a long process of making all those individual dumplings and shortened it up and still you have an awesome meal.

Chicken and dumplings casserole
3 chicken breasts
2 cups stock from the chicken^
2 cups bisquick
2 cups milk
3 bouillon cubes
Cream of chicken soup
Stick of butter
Preheat oven to 350 and you'll need a 9x13 pan.
Put chicken in pan and add enough water to cover chicken. Bring to boil then remove from heat cover with lid and let sit for 15 minutes.
Remove and shred chicken
In bowl mix milk and bisquick.
In another bowl whisk soup, bouillon cubes and 2 cups stock from chicken you just made.
Melt butter and pour in bottom of pan.
Place chicken on top.
Slowly pour bisquick mix on.
Slowly pour soup/stock mixture on very top.
Bake 30 minutes uncovered
Let sit for 5 minutes before serving.

My dad says this does NOT need salt the bouillon cubes add just the right amount. There were no left overs here it was eaten all up. Now turn on some nascar or your favorite football game grab yourself a plate and enjoy. What better way to spend a rainy fall Sunday!?

Cheesy chicken spaghetti

This took some prep time cause of shredding all that chicken. But the cook time is actually pretty quick! It smelled amazing!

Cheese chicken spaghetti
Shredded chicken
Spiral noodles cooked
Cream of mushroom soup
Cream if chicken soup
Canned tomatoes
1/2 cup if water
Onions
1 lb velvetta cheese
Salt and pepper

Spray your crock pot or use a crock pot liner which I've come to love!
Add all your ingredients and cook 2-3 hours.

If you love your crock pot but hate the messy clean up you must invest in the liners. Clean up is a breeze and who doesn't love easy clean up!

Breakfast burritos

My fiancé just started a new job and isn't used to being awake so early because he's used to a night time job. So he's been struggling trying to find quick foods. In attempt to save money and of course be healthy I found homemade breakfast burritos on Pinterest. This is what I used I didn't measure anything and you can change anything up to fit your liking.

Breakfast burritos
Potato
Onion
5 eggs
Cheese
Ham lunch meat
Tortilla shells

Scramble your eggs and set aside.
Cut up your potato, onion, and ham and throw in a pan over medium high heat to cook. When the potatoes are done throw the eggs right in there.
When the eggs are just about finished throw a hand full of cheese on top.
Now I hate cleaning egg and cheese out of pans so I transferred the mixture into a bowl to cool down.
Spread a little mixture in your tortilla shell, add some extra cheese, roll up and cover in plastic wrap.
On my freezer bag I wrote "microwave 2-3 minutes"

Bam! There ya go a weeks worth of breakfast burritos, they taste better then McDonald's and are much cheaper. 5 eggs made 6 burritos but I had the small shells. If you use the bigger shells you probably will only get 3 or 4 out of that many.

Crock pot French dip

Oh my god this meal was amazing! My fiancé said it gets a platinum star. And it was so simple to make I forgot I was making dinner. If you like those au jus sandwiches you will love this.

Crock pot French dip
Beef roast
Condensed French onion soup
1 small can beef stock
1 tsp garlic powder
Hoagie buns or French rolls (I used hoagie buns)
Cheese-optional
Combine the soup, stock and garlic powder in crock pot.
Add roast and cook for 6-8 hours
Take roast out and set on plate. Cover with tin foil an let sit for 15 mins.
Slice and put back in crock pot for 30 mins.
Serve on rolls and add cheese if you like. Dip sandwiches in juice from the crock pot.

I took my picture half way through eating because I almost forgot. Thank god I remembered because it was scarfed down by everyone faster then I had a chance. This is a must try!

Pork chops in beer

So I was feeling very in the mood to cook yesterday and then everyone showed up at different times for dinner so all that work for nothing. But either way the food was good and everyone ate well.

Pork chops in beer
12 oz of your favorite beer
2 cups ketchup
3/4 cup brown sugar
8 pork chops (I only used 5)

Preheat your oven to 350 and you'll need a 9x13 pan.
Mix together your beer ketchup and brown sugar and pour into the bottom of the pan. Place your pork chops in mixture and bake uncovered for 1 hour.

I made mashed potatoes and honey beer bread to go along with them. The bread was AMAZING!

Crowd pleasure chicken

Again this was a meal you don't stir. More then that your not even supposed to lift the lid. You mix it together put the lid on and LEAVE IT ALONE!! Very simple and lived up to its name.

Crowd pleaser chicken
3 cups cooked cubed chicken
Penne noodles cooked
1/2 cup celery
1/2 cup onions
1/2 cup Parmesan cheese
1/2 cup milk
1 1/2 cups small curd cottage cheese
1 cup cheddar cheese
4oz canned mushrooms
Cream of chicken soup
1/2 cup chicken broth

Spray crock pot
Combine and mix all ingredients in bowl and pour into crock pot.
Cook low 6-8 hours and remember don't touch! No lifting the lid!

No seriously don't touch! It's worth the wait. The smell is amazing and you won't be upset!

Strawberry cream cheese cobbler

So along with dinner I decided to make dessert today. We have 2 things of strawberries and I knew they would go bad if they didn't get used up. And I knew I had this recipe so win win!

Strawberry cream cheese cobbler
1/3 cup butter
1 egg lightly beaten
1 cup milk
1 cup flour
1 cup sugar
2 tsp baking powder
1/2 tsp salt
2 qts strawberries washed and cut up
4oz cream cheese cut into small pieces
Preheat oven to 350 and grease a 9x13 pan
Melt butter and pour in bottom of pan
Mix egg, milk, flour, sugar, baking powder, and salt. Pour over butter but don't stir.
Add strawberries and cream cheese pieces.
Bake 45 minutes!

The smell is AMAZING I love when making food the whole house smells like it. Oh man it's the best!

Crunchy chicken noodle

My mom has a old recipe that she used to make called "chicken shit" no lie that's really what we called it. It used to be a staple in our house and we loved it. But she hasn't made it in years and years. So I came across this recipe and it made me think of that. It's almost like an add on to it came out pretty good.

Crunchy chicken noodle
2 cups chicken cubed and cooked (make as much chicken as you like)
2 cups egg noodles cooked and drained (again make as many noodles as you like)
2 cups shredded cheddar
1 cup frozen mixed vegetables
1 1/4 cup milk
Cream of chicken soup
2 cups Frenchs fried onions

Preheat your oven to 400* and spray a 2 quart baking dish.
Mix together your chicken, noodles, milk, vegetables, soup, 1/2 the cheese and 1/2 the onions.
Bake for 30 mins
Take out and stir. Add the remaining cheese and onions and continue cooking for 5 mins

My fiancé said it reminded him of a chicken pot pie without the crust. All in all they liked it! That's all that matters :)

Pumpkin cookies!

Yes it's finally my FAVORITE time of year! I love everything about fall especially the baking and all the yummy smells. So I know fall doesn't tech. Start till this Saturday but I can't wait any longer. So to pinterest I go!

Pumpkin cookies
1 cup shortening
3 cups sugar
2 eggs
1 large can pumpkin purée 30 oz
1 tsp vanilla
5 cups flour
2 tsp cinnamon
2 tsp nutmeg
2 tsp baking soda
2 tsp baking powder
1 tsp salt

Preheat your oven to 350*
You pretty much just want to throw everything in, in the order I listed above. Seriously it's that easy (as to why I chose it) bake for 10-12 mins. They don't really look done at first but trust me they are!

When you pull these cookies out you instantly get hit with the pumpkin smell and it's amazing if I do say so!

BBQ chicken cornbread

I made this last night for dinner. I'm always loving a good crock pot meal but this one bugged me. I'm a stirrer I have to keep checking my food and always worried. But this you combine and don't touch. So easy yes but a little nerve wrecking. But it smelled amazing and ended up coming out pretty good.

BBQ chicken cornbread
1 lb chicken breasts
18oz bottle BBQ sauce
1 cup frozen corn
1 cup onions
4 oz water
1 medium sweet potato (cubed)
Jiffy cornbread mix (I used 2 boxes)

Spray your crock pot and layer the following
Chicken- sweet potato- corn-onions-BBQ sauce-water
Mix the cornbread according to the box and pour on top.
Put the lid on and cook for 6-8 hours.

The last 20 mins I took the lid off and let it finish without because the one side of the cornbread looked a little mushy and that really seemed to help!

Crock pot sweet chili

So fall is just around the corner and the temp is finally starting to cool so I thought what a perfect night for chili dogs. Off to pinterest I went!

Crock pot sweet chili
2lbs ground beef (I only used 1 pound)
2 cabs kidney beans
4 heaping tbsp brown sugar
1/4 cup ketchup
1/4 cup onions
Can of tomato sauce

Brown your ground beef and drain.
Combine all ingredients into your crock pot and cook low for 2 hours or so.

How easy is that! Grill yourself some hit dogs and get a bag of cheddar cheese and there ya go! Enjoy the fall season!

Beef n biscuits

I made this awhile ago. I just realized I never posted it! I was a little worried this one wouldn't go over to well but actually it got completely ate.

Beef n biscuits
1 lb ground beef
1/2 cup chopped celery
1/2 cup chopped onions
2 tbsp flour
1 tsp salt
1/8 tsp pepper
2 8 oz cans tomato sauce
Biscuits
Shredded cheddar cheese
Preheat oven to 350* and ready a greased 9x13 baking dish.
Cook beef with onion and celery over medium heat and drain.
Stir in flour, salt and pepper.
Add tomato sauce and let mixture simmer for 5 minutes.
Transfer to baking dish.
Arrange biscuits on top (yes on top) of the beef mixture and cover with cheese.
Bake uncovered for 20 minutes.

They loved this! I thought I made too much but they ate it all! That always makes me feel good :)

Meatball sub casserole

1 loaf Italian bread cut in 1 inch slices
8 oz package cream cheese-softened
1/2 cup mayo
1 tsp Italian seasoning
1/4 tsp black pepper
Mozzarella cheese
1 lb frozen meatballs -thawed
28 oz pasta sauce
1 cup water
Preheat oven to 350* and ready a ungreased 9x13 baking dish
Arrange bread slices in single layer in bottom of pan.
In bowl combine cream cheese, mayo, and seasonings. Spread over bread. (don't be afraid to really spread this on!)
Sprinkle half cheese on bread.
In a bowl mix meatballs, sauce and water. Spoon over cheese and bread.
Top with remaining cheese
Bake uncovered for 30 mins.

My dad won't leave me alone about this dish. He wants me to make it again ASAP! His favorite part was the cream cheese mixture that's why I said don't be afraid to really slab that on. As soon as I have this baby I want to make this so I can eat it. It's smelled amazing!

Crock pot Salisbury steak & Mac n cheese casserole

So I've been a little behind on my posting! This past week I got daring and made 2 dishes from pinterest. Usually I only do one! This made a LOT of food so make this if you have to feed a bunch of people.

Crock pot Salisbury steak
2 lbs ground beef
1 envelope dry onion soup mix
1/2 cup Italian bread crumbs
1/4 cup milk
1/4 cup flour
2 tbsp oil
2 cans cream of chicken soup
1 packet dry au jus mix
3/4 cup water
In a large bowl mix beef, onion soup mix, bread crumbs and milk. Shape into 8 patties (mine made 13!)
Heat oil in large skillet. Dredge patties in flour and quickly brown on both sides.
Place patties in slow cooker.
In a bowl mix soup, au jus mix and water. Pour over meat.
Cook for 4-5 hours

2 out of 3 liked this. The boys loved it and want it made again! My mom just thought it was ok.

Mac n cheese casserole
4 tbsp butter
Salt & pepper
Elbow macaroni
2 12 oz cans evaporated milk
1/3 cup milk
2 eggs
1/2 tsp seasoning salt
1/4 tsp garlic powder
2 packs shredded cheddar cheese
1 pack Monterey jack (I used Munster cheese that I shredded)
Preheat 375* and you will need a greased 9x13 baking dish.
Cool macaroni & drain. Add butter and toss.
In a medium bowl whisk milk, evaporated milk, and eggs. Add in seasoning salt and garlic powder.
Combine cheeses in another bowl.
In baking dish place half noodles on bottom, half cheese, the rest of the noodles and the rest of the cheese. Pour your milk mixture over the entire thing.
Bake 35-45 minutes

My mom loved this! The boys not as much. So half and half they liked the whole thing. I was just proud I pulled off two recipes in one meal! I've come a long way!

Creamy burrito casserole

"This deserves a triple star" is what I heard after serving this dish. And boy did it smell fantastic.

Creamy burrito casserole
1 lb ground beef
Cream of mushroom soup
Sour cream
Shredded taco cheese
6 large tortilla shells
Onion
Taco seasoning
Refrained beans

Brown your meat with onions and drain.
Add taco seasoning and beans into drained meat.
Combine soup and sour cream in a bowl and set aside.
Grease a 9x13 baking dish and pour half your sour cream mixture on bottom.
Tear up 3 shells and spread on top of mixture.
Half of meat mixture on top of that. Topped with cheese.
Repeat layers.
Bake uncovered for 30 minutes!

This meal is very filling! And you could garnish this with anything you like on tacos. Such as lettuce, black olives or tomato. A great Mexican dish for those who don't like spicy food.

Pork chops o'brien

This was a half hit half miss recipe. The pork chops were amazing the potatoes were just ok. So I think next time I'll make the pork chops the same and do a different potato dish. But it's worth a taste

Pork chops o'brien
Frozen hash browns o'brien-thawed
6 pork chops
Cream of celery soup
1/2 cup sour cream
1/2 cup milk
Frenchs French fried onions
Shredded cheddar cheese
1/4 tsp pepper

Brown your pork chops.
In a large bowl mix milk, sour cream, pepper, 1/2 cup fried onions, 1/2 cup cheese. Fold in hashbrowns.
Pour mixture into a greased 9x13 baking dish. Place pork chops on top.
Bake covered at 350 for 40-45 minutes
Pour remaining cheese and onions on top and bake uncovered for 5-10 minutes.

This recipe was super easy and I do plan to make it again and put my own twist on it. I'll post that recipe as well!

Cheesy chicken ranch lasagna

Sometimes I can't tell if the family enjoys one of these recipes or not until the second helping comes around. And this was one of them. I was a little nervous because first I didn't think I had enough chicken and then I wasn't sure about the sauce. But it came out great and smelled amazing.

Cheesy chicken ranch lasagna
Lasagna noodles
Chicken breasts cooked and cubed
2 cans of evaporated milk
Ranch dressing dry packet
Pepper
Shredded cheddar cheese
Shredded mozzarella cheese

Cook your chicken an your noodles.
Preheat your oven to 350
In a saucepan on low heat mix milk ranch and pepper.
Let simmer for 25 minutes stirring frequently.
Take a 9x13 greased baking dish and layer noodles-chicken-sauce-cheese and repeat.
Bake for 35-40 minutes
Let sit for 10 minutes before serving

The sauce I thought would thicken up but it only kinda did. My fiancé liked the bottom noodle cause it soaked up the sauce and my mom liked the top noodle cause it was crunchy and covered in cheese. Hope you enjoy!

Sour cream noodle bake

This was a huge hit! I was nervous because the name of it was kinda ify but when the third helping came out I knew I had found a winner.

Sour cream noodle bake
Egg noodles (extra broad)
1 lb ground beef
1/2 cup sour cream
1 1/4 cups cottage cheese
15oz can tomato sauce
Shredded cheddar cheese
Onion
Salt and pepper

Preheat your oven to 350 and you will need a greased 9x13 baking dish.
Brown your beef and drain. Add tomato sauce and salt &pepper to pan and let simmer as you prepare.
Cook pasta-drain
In a large bowl combine sour cream and cottage cheese with pepper and onions. Add noodles and mix well.
In your baking dish you want to layer:
Noodle
Meat
Cheese
Noodle
Meat
Cheese
Your baking dish will be filled to the top and that's fine. Bake for 20 mins

This smelled so good and hit the spot for sure. Enjoy!

Crock pot Italian chicken

This was an amazing meal. And again made the house smell amazing all day long. I loved this mostly because I didn't have to touch it. Don't have to stir it or anything just put it in and leave it alone.

Crock pot italian chicken
4 chicken breasts
Mini carrots
Potatoes cubed
16oz bottle of italian dressing
Italian seasoning
Parmesan cheese

Spray your crock pot and pour a small amount of Italian dressing on bottom place your chicken in and pour more dressing on top. Sprinkle italian seasoning on top. Add carrots and potatoes and pour the rest of the dressing on top. Sprinkle more italian seasoning on the very top.
Cook low 8 hours. Serve with Parmesan cheese on top

Chicken was literally falling apart trying to get it out. This dish was so good. I recommend it.

Breakfast casserole

Who doesn't love breakfast for dinner! And this is the perfect way to do it. So easy and smells so amazing.

Breakfast casserole
1 can/roll crescent rolls
1lb sausage
4 eggs
3/4 cup milk
Salt & pepper (to taste)
Onion
1 bag shredded cheddar cheese

Preheat the oven to 375* and spray a 9x13 pan.
Cook your sausage with the onion until done.
In the bottom of baking dish roll out your crescent rolls. Put sausage on top.
Place cheese on top of sausage
In a small bowl beat eggs, milk, salt and pepper. Pour mixture on top of cheese and sausage.
Bake for 25 mins and serve warm.

How easy is that! And perfect for dinner or even brunch! You could add in bacon as well if you'd like. Leave a comment if you put your own twist on this recipe!

Tater tot casserole

This was a simple dish that went over pretty well at my house. Who doesn't love tater tots!

Tater tot casserole
2lbs ground beef
Small onion
1 can cream of mushroom soup
1 can cream of celery soup
1 bag of extra crispy tater tots
1 bag shredded cheddar cheese

Preheat your oven to 425* and grease your 9x13 pan and set aside.
Brown beef and add onions. Drain
In same pan fold in both soups. Transfer to the the baking dish.
Place tater tots on top of beef mixture.
Bake for 25 mins adding the cheese at the last 10 mins.

How simple is that! Plus it's so good so you have a win win!

Banana Bread

We had some bananas on hand that were starting to get to that point where you either had to make something with them or throw them away. So off to Pinterest I went to find a easy recipe. Boy did I find it.

Banana Bread
2 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 cup butter (softened)
3/4 cup brown sugar
2 eggs
2 1/3 cup banana (about 4 or 5 bananas)

Preheat your oven to 350*
You will want to spray a 9x5 loaf pan.
In a large bowl mix flour, baking soda, and salt.
In a separate bowl mix butter and brown sugar.
Stir in eggs and mashed bananas. Slowly adding the flour mixture. 
Your batter should be pretty thick. Pour into your loaf pan.
Bake for 60-65 mins. Transfer to a wire rack for cooling.

As a 6 month pregnant lady this made the house smell so amazing I couldn't pay attention to anything else. It was moist and perfect and with a tiny little bit of butter on top I couldn't have asked for anything better. I really hope you try this one because it was so good.

Chicken Alfredo Roll Ups


This was so easy and smelled AMAZING! The hardest part of this recipe was shredding the chicken. And that was nothing.

Chicken Alfredo Roll Ups
7 Lasagna Noodles (you only need 6 but 1 is just in case)
2 1/2 cups alfredo sauce (or one jar)
2 cups shredded chicken (3 chicken breast was perfect for 6 noodles)
garlic salt
shredded mozzarella cheese

Preheat your oven to 350* and cook your chicken to shred
Cook your lasagna noodles and rinse in cold water. Lay them out on a paper towel when cooked.
Spray a 8x11 pan and then pour just enough alfredo sauce in the bottom to just cover the bottom.
Take your noodle and spread a spoonful of sauce on. Then add shredded chicken, cheese and garlic salt.
Roll up your noodles and place in pan.
Cover up the noodles with the remaining sauce and place in oven for 20 mins.
Take out and sprinkle remaining cheese on top and continue cooking for another 10 mins.

This recipe got a big fat star next to it! I got tons of mmmm's as everyone enjoyed. This is so simple that nobody has an excuse not to try it. A friend suggested using this recipe and making it stuffed shells instead of the lasagna noodles. Try it! If anyone does let me know!

Chicken Taco Chili

Let me start off by saying this made the entire house smell AMAZING the whole time it was cooking! This is seriously the easiest dish ever to make. I have never shredded chicken before, so I was interested to see how this was going to come out but it came out great. Ok so here is what you need:

Chicken Taco Chili
1 can black beans
1 can kidney beans
1 can corn
16 oz tomato sauce
28 oz diced tomatoes
Taco seasoning packet
3 boneless chicken breast

Lay the chicken down first into your crock pot. I then put half the pack of taco seasoning directly onto the chicken.

Add all the other ingredients (I cooked the corn on the side because my mom doesn't like corn)

Cook for 10 hours on low (I only cooked it about 8 hours it was completely done)

About 2 hours in I flipped the chicken breasts over and cooked them on that side for 2 hours. At that time I could tell the chicken was just about done and I took 2 forks and shredded it. (if you never shredded chicken before and want to know more leave a comment and I will further explain)

You can add cheese when you serve it. My dad and boyfriend did and they enjoyed it. Also on the side I took tortilla shells cut them in 4's put them on 2 cookie sheets drizzled some oil and salt on top. Pop them in the oven 400* for 5 mins and bam homemade tortilla chips!!

This dish seemed to be a big hit and stuck to your bones. Would be great on a cold night.

Cinnamon Roll Cake


This a must make breakfast! I made this this past Sunday for breakfast and it was a hit. The best way to eat it is straight from the oven when its hot. It sounds a little intense but I only post things that are easy to make so no excuses!!

Cinnamon Roll Cake
"cake"
3 cups flour
1/4 tsp salt
1 cup sugar
4 tsp baking powder
1 1/2 cups milk
2 eggs
2 tsp vanilla
4 Tbsp melted butter
"cinnamon roll"
2 sticks softened butter
1 cup brown sugar
2 Tbsp flour
1 Tbsp cinnamon
Glaze
2 cups powdered sugar
5 Tbsp milk
1tsp vanilla

Preheat oven to 350* Greased 9x13 pan

1. Making the "cake". Mix flour, sugar, salt, baking powder, milk, eggs and vanilla. I used my trusty stand up mixer.
2. Once completely mixed slowly add melted butter. What I did was turn the standing mixer on and then spooned in the butter seemed to work perfect. Mix well and pour into your greased 9x13 pan
3. Making the "cinnamon roll". Mix 2 sticks of softened butter, brown sugar, flour and cinnamon until well combined. I used the same bowl I used for the cake, no need to dirty 2 bowls!
4. Cinnamon concoction is pretty thick so you want to try your hardest to spread it onto the cake in your pan. Then take a butter knife and swirl together the two. So pretty much just make sure the cinnamon is spread all over. It looks like a marble cake basically.
5. Bake for 25-30 minutes. It will look undone because of the butter but trust me after 30 mins its completely done.
6. The last 5 minutes this is baking you are going to want to make your glaze. In a small bowl whisk together powdered sugar, milk and vanilla until smooth.
7. The best part: when the cake comes out and its cooled slightly plate some for everyone and pour that sweet glaze on top and watch it melt.

This was an amazing breakfast and filled everyone up. After we ate I thought if you cut up some apples and put them in there that would taste really good. So next time I will have to try that. If anyone tries putting apples in this let me know how it turns out! Your house will smell AMAZING after baking this.

Doggy cake

Ok so I know what your thinking, I thought this was about easy recipes to make? Well thats true, but we can't forget about our 4 legged friends! My dog Jack recently turned 5 and I wanted to make him something he could enjoy so I started my search. I came across this website with a recipe that didn't seem to hard to make. Here you go!

Peanut Butter Delight
1 cup white or whole wheat flour 
tsp baking soda 
1/4 cup peanut butter 
1/4 cup vegetable oil 
1 cup shredded carrots 
tsp vanilla 
1/3 cup honey 
1 egg
Directions:
Preheat oven to 350°F (180°C)
Mix together flour and baking soda. Add remaining ingredients and mix well.
 Pour into a ring mold sprayed with a nonstick spray for 40 minutes. (I made them into cupcakes instead of a big cake because I only have a Yorkie-Poo so he is just a little guy)
Frost this cake with low fat cottage cheese and decorate with carrot pieces. Store in refrigerator. 

Also on this same website I found a Cinnamon dog safe frosting that I put on the cupcakes instead of the cottage cheese and carrot pieces. Heres that recipe:


Cinnamon Frosting:
Combine the following ingredients and blend thoroughly: 
12 ounces nonfat cream cheese (room temperature) 
3 tsp cinnamon 
1 tsp vanilla 
1 tsp honey
He really seemed to like his cupcakes. Because he's a smaller dog I broke it up into pieces in a bowl and let him chow down. I recommend not using a lot of frosting because he had a hard time swallowing all that frosting cause its pretty thick. Plus with cupcakes you can share with doggy friends and your dog can celebrate their birthday longer!
Your probably wondering what does it taste like. You know we had to try it! My boyfriend had a tiny piece of the cupcake and said it tasted like bland carrot cake and I had a taste of the frosting that really just tasted like nothing. But as long as the dog is happy I am happy.

Lactose Free Milkshake

Ok, so to most everyone this is very easy but I wanted to share anyways. Pregnancy has left me lactose intolerant and I HATE it! I miss everything dairy especially ice cream and milkshakes. So today I went to the store and got what I needed to make a lactose free milkshake.

For my fellow lactose intolerant readers, I don't know if you already know this but Bryers makes the best lactose free ice cream in vanilla. To me it tastes exactly like normal ice cream you can't even tell the difference. So here is what I did:

Couple scoops of Bryers lactose free vanilla ice cream
about a cup of Lactaid milk (I personally think this tastes better then Silk but use what you like best)
5-7 frozen strawberries

Put it in the blender and there you go!!

Like I said, I know its nothing special but it's been about 5 months since I have been able to enjoy dairy and this hit the spot big time. Of course you can use any type of frozen fruit that you prefer. I enjoy the frozen better then fresh for two reasons. A: because where I live if I bought fresh strawberries by the time I got them home they would be rotten and B: it didn't make the milkshake chunky or soupy it was the perfect consistency.

Chocolate Chip Oreo Brownies AKA Slut Brownies

My oh my are ready for this amazing treat? While searching Pinterest for a recipe for something easy to make for our Memorial Day picnic I came across this amazing dessert. I do have to warn you these bad boys are rich so a little piece goes a long way. 

Chocolate Chip Oreo Brownies AKA Slut Brownies
  • 1 cup unsalted butter, room temp
  • 1 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups chocolate chips (a whole bag basically)
  •  1 package of oreo cookies
  • 1 package of brownie mix (to be prepared as directed on the box) I used a cheap store brand
Preheat the oven to 350 and line a 9X13″ pan with parchment paper (the parchment paper really does help with getting it out of the pan plus easy clean up)
The Chocolate Chip cookie layer:
Cream the butter and sugar until light and fluffy.  Add eggs followed by vanilla and mix well.
Add the flour, baking soda and salt and continue to beat until well combined.  Fold in the chocolate chips.
Spread the cookie dough evenly into the pan.
Next comes the Oreos:
Now place the oreos on top of the cookie dough. Use your favorite Oreos and try spicing it up with the mint oreos, double stuffs, or any other type you would like to use I used regular ones.
Finally those amazing brownies.
Prepare brownie batter as directed on the box it came in. (I didn’t even wash out my mixer bowl…just scrape the cookie dough clean and move on!)
Pour brownie batter on top and smooth it around with a spatula.
Bake for 40-50 minutes.  They should look slightly under baked.  The edges will likely puff up and dry out a bit, at first I thought I did something wrong but thats just how they are supposed to be. I cut mine a little too early and thought "oh no they aren't done!" As hard as it is, just let them cool completely it will take a few hours and then cut them. Trust me you won't be sorry.

This recipe is so simple and will leave a huge impression on anyone that tries one. Plus the clean up is so little! Only one mixing bowl for the whole thing, plus with the parchment paper your pan will even be clean. So simple recipe and little clean-up, that is for sure a yes in my book!
