French onion pork chops

These were some gooood pork chops! And the potatoes that are also on the plate are those velvetta cheesy potatoes. Not too bad! I'd recommend them.

French onion pork chops
Pork chops
2 envelopes onion soup mix
1/3 cup bread crumbs
2 eggs beaten

400* cookie sheet
Mix together the soup mix and breadcrumbs on a plate.
Dip the pork chops in egg then into breadcrumb mix.
Place on cookie sheet
Cook 10 mins on each side

How easy is that!!! No excuses for nor making this one!

Mushroom pork chops and potato cakes

So I made these pork chops last week and when I made out this months meals I accidentally put it again. But I didn't post it last time so I will this time. And the potato cakes omg were to die for. Everyone must make these!

Mushroom pork chops
Pork chops
Garlic salt
Mushrooms diced
Onions chopped
Cream of mushroom soup

Brown pork chops
Place onions and mushrooms in with pork chops and sauté for 1 min
Spoon soup on top and simmer for 20-30 minutes.
(How easy is that!?)

Potato cakes
2 cups cold left over mashed potatoes
4 tbsp cornstarch
Chopped onions
Salt & pepper

Combine ingredients and make flat patties (not too big)
In a pan pour canola oil enough to cover the whole bottom of pan and heat up.
When the oil is hot place 4-5 patties in at a time.
When you see the edges golden brown flip.
About 4-5 minutes on each side

So amazing seriously and they are so easy there's no excuse not to try these!

Mexican chicken casserole

My fiancé always says that I can make better Mexican dishes then a Mexican restaurant. I don't know if this is true or of he's just being nice haha. But after eating this he said its his new favorite and I must make it again.

Mexican chicken casserole
2 cans rotel
1 cup chicken broth
3 chicken breasts
1 cup chopped onions
1 cup evaporated skin milk
1 cup shredded Monterey Jack
2 oz cream cheese
10 oz enchilada sauce
Tortilla shells

350* 9x13 greased pan
Combine broth and 1 can rotel and bring to boil.
Add chicken and cook for 15 mins.
Shred chicken
Over medium high heat combine rotel, onions, evaporated milk, cooking liquids And chicken, Monterey Jack, cream cheese and enchilada sauce.
Cook for two minutes.
Break up 3 tortilla shells place in dish. Spoon half chicken mix on top. Shred 3 more shells and add remaining mix. Cover with cheese and bake for 30 mins

My mom needed some sour cream to make it not so spicy but she liked it. All in all its a good meal - amazing if you ask Marty.

Sweet potato baby food

So i started this blog while pregnant and now it's come to the time where mason is eating baby food. They really do grow up so fast.
I started off buying gerber stage 1 baby food. Before I started making anything I wanted to make sure he liked it. So far bananas, squash, peas and sweet potatoes are all favorites. Green beans and apples are no nos.
So off to Pinterest I went to begin my baby food making. First attempt is sweet potatoes. So easy just peel your sweet potato, slice it up small and bowl till you can easily break chunks apart with spoon. Save the water!
I used my magic bullet and placed sweet potatoes in and added the cooking water till I got the consistency I wanted. I purchased a 2 pack of ice cube trays for $2.50 at giant eagle. I filled them with the baby food and froze them. Tomorrow I will transfer them to ziplock freezer bags.
All together I will get 9 days of feeding out of what I made. And spent $1.99 on the sweet potato.
Bananas are next!!!

Spinach lasagna roll ups

This meal was super easy to make and the recipe I got off line didnt have chicken but I thought it needed something more

Spinach lasagna roll ups
Shredded chicken (optional)
15oz ricotta cheese
Frozen spinach thawed and chopped
8 lasagna noodles
Marinara sauce
1/4 cup Parmesan cheese
1 cup mozz cheese
1 egg
400* any sized baking dish greased
Cook noodles and rinse in cold water
Mix remaining ingredients together except marinara sauce
Fill noodles with mixture, roll up and place in dish. Pour marinara sauce on top
Bake for 30 minutes.

My dad and fiancé are troopers. They don't like spinach but they did try these meals and actually have liked them! See you can't be afraid to try things

Chicken Parmesan

We get our chicken from SAMs club so our chicken breasts are massive. I ended up cooking this 20 minutes longer then what it called for. Use your judgement on cooking time

Chicken Parmesan
3-4 chicken breasts
Bread crumbs
2 tbsp butter
Marinara sauce
Spaghetti noodles
Shredded mozz cheese

450* cookie sheet
Melt butter and dip chicken in butter then into bread crumbs.
Place on a cookie sheet (I covered mine with foil and sprayed it)
Cook for 20 minutes flip and continue cooking for 10 minutes
Meanwhile make your spaghetti noodles
Serve chicken on top of noodles with marinara sauce and mozz cheese.

California chilli

This meal can be made on the crock pot or not. If you want throw it in there go ahead if not its cool. I made it in the Crock pot to save me time later

California chilli
1 pound ground turkey
Medium onion chopped
Pinto beans
Kidney beans
1 tsp garlic powder 1 tsp chilli powder
8 oz can tomato sauce
1/2 cup BBQ sauce
2 large tomatoes sliced

Brown turkey in butter with onions.
Add remaining ingredients and simmer for 1 hour.
Or throw in the crock pot on low for however long you need

Serve with some corn bread and your good to go!

Zucchini and basil pesto

Day 2 of healthy month and I have to admit I was worried about this one. My dad is extremely picky about his food. And we usually end up lying to him about what's in things just so he'll eat it. So this meal was throwing him out of his comfort zone. Verdict is... He liked it!!! Success!

Zucchini and basil pesto
Penne pasta
2 med zucchini
2 cloves garlic minced
Olive oil
2/3 cup pesto (recipe below)
1/2 cup pasta cooking water

Cool noodles and save water
Sauté garlic in olive oil then add zucchini cool for 5 minutes
Add pasta and pesto and stir. Add water little by little to desired consistency

Basil pesto
2 cups fresh basil leaves
3 cloves garlic minced
1/2 cup extra Virgin olive oil
3/4 cup Parmesan cheese
1/4 cup lemon juice
Salt and pepper to taste

Blend ingredients all together. I used my magic bullet and it worked perfect.

I also topped the whole meal with a little Parmesan cheese just for a little something extra.

Go ahead... Try it!!! It's such a simple meal to make and it's healthy!

Healthy Italian chicken

Did you guys miss me!? Last month was a throw back month of some of our favorites. My dad said he was sick of new for awhile. So now I'm back with a whole month of new recipes. And in the spirit of my wedding coming up everyone wants to lose weight. So I dubbed this month healthy month.

Healthy Italian chicken
3-4 chicken breasts
Artichoke hearts
3-4 tomatoes sliced into big chunks
Salt and pepper
2 garlic cloves chopped
1 tsp sugar
2 tbsps flour
Splash of extra virgin olive oil
Shredded mozz
350 9x13 greased pan
Place your chicken on the bottom of dish
In a bowl mix the rest of ingredients minus the cheese and poor onto chicken
Bake for 40-50 minutes
Sprinkle cheese on top and bake for an additional 5 minutes

Smells so amazing and it's good for you.
So go try it!!

Chicken and broccoli

Looking for a healthier meal? This might be it. Sooo good but I'm a sucker for chicken and broccoli anything.

Chicken and broccoli
3-4 chicken breasts
Cheddar soup
Cream of chicken
14 oz can chicken broth
1/2 tsp salt
1/2 tsp garlic salt
1 cup sour cream
3 cups rice
Cooked broccoli
Shredded cheddar
Add chicken broth, soups, salt and garlic salt into crock pot then whisk till smooth. Add chicken breasts.
Cook for 6 hours
Shred chicken and stir in sour cream and broccoli. Cook your rice and stir in along with cheddar cheese.

Sooo good and so filling

Meatballs

Where are my Italians!!!? My fiancé is half Italian so I seem to always be trying to impress him with an Italian meal. This got my tummy grumbling and I had to smell it cooking all day!

Meatballs
1 pound ground beef
2 cloves of garlic minced
1 egg beaten
Small onion chopped
1 1/4 cup Italian breadcrumbs
Can of tomato purée
Can of crushed tomatoes
Spaghetti sauce
Mix meat, garlic, egg, breadcrumbs, and onions in a bowl.
In crock pot combine the rest of the ingredients.
Roll meat mixture into balls and place into sauce.
Cook for 8 hours
Serve over noodles

All in all he loved it! If you love spaghetti and meatballs you gotta try this

Atomic buffalo turds!

Yup you read it right! If you like jalapeño peppers you'll love this!

Jalapeño peppers
Sausage links
1 cup cream cheese
1 cup shredded Monterey Jack
Bacon
425 baking sheet
Slice in half and Devein the jalapeños
Mix the cream cheese and Monterey Jack together and fill jalapeños halves with it
Place a sausage on top and wrap with bacon.
Bake for 30 mins

Cheesy sausage and potatoes

This smelled so good! A good stick to your bones meal and great for a cold day.

Cheesy sausage and potatoes
4 potatoes cubed and boiled
Italian sausage
1/2 pound velvetta
2 cups milk
4 tbsp butter
4 tbsp flour
1/2 tsp salt
1/4 tsp pepper
1/2 cup cheddar cheese
1/8 tsp paprika
350* 2 quart casserole dish greased
Brown Italian sausage.
Combine potatoes and sausage in dish
In med sauce pan combine the rest of ingredient except cheddar and paprika. Keep stirring till smooth.
Pour over sausage and potatoes.
Top with cheddar and paprika
Bake 35-40 mins

Mexican braid

My fiancé says I make the best Mexican dishes. And I love making them. This was very easy and actually it made 2 instead of one.

Mexican braid
1 lb ground beef
Small onion
Taco seasoning
Black beans- drained
Rotel- drained
Crescent rolls (get 2 Cans just incase) cheddar cheese
Preheat 350* cooking sheet
Brown hamburger an drain. Add onions beans, rotel, and taco seasoning.
Lay crescent roll out on a parchment f paper lined cookie sheets. Cut 1 in line on both sides leaving the middle together.
Spoon in meat mixture and top with cheese. Gold over slices and press together so they don't come up done.
Bake 20-25 mins and serve

This looked so good. I'm happy how it came out.

Hawaiian BBQ chicken

This one wasn't a favorite tonight but I figured I would post it anyways. Maybe if you used a different BBQ sauce it would be better but we won't be making this again

Hawaiian BBQ chicken
4-6 chicken breasts
Pineapple chunks - drained
Hawaiian BBQ sauce

Place chicken in crock pot cover with pineapples and whole bottle of BBQ sauce. Cook for 4-6 hours then shred chicken
Serve over hot rice

I used lawreys Hawaiian BBQ sauce and it wasn't terrible just not a favorite

Sliders and pasta

This is a 2 recipe meal. The first is the roast sliders. This recipe made a small portion so if you have a lot to feed then I would double the recipe.

3 envelope roast sliders
Roast
Onion soup mix
Italian dressing mix
Brown gravy mix
1 cup water
Combine and cook in slow cooker for 8-10 hours
Shred and put on keiser rolls with Swiss cheese slices

The pasta is creamy garlic pasta. The cheese melted a little funny so I suggest sprinkling the cheese on top rather then adding to the pot.

Creamy garlic pasta
2 tsp oil
4 cloves of garlic minced
2 tbsp butter
1/4 tsp salt
1/2 tsp pepper
3 cups chicken stock
1/2 lb spaghetti noodles
Parmesan cheese
3/4 cup heavy cream
Bring oil to med low heat and sauté garlic
Mix in butter till melted.
Add salt and pepper and stock. Raise heat to high and boil.
Once boiling add noodles an cook to package directions.
Reduce heat and mix in park cheese( or put on top afterwards)
Turn off heat and stir in heavy cream.

Bourbon chicken

If you like Chinese good then you have to try this meal. It's so easy and so so so good. I was told to give this one a 5 star rating

Bourbon chicken
2 boneless chicken cut to bite size pieces
1 crushed garlic clove
1/4 tsp ginger
3/4 tsp red pepper flake
1/4 cup apple juice
1/3 cup brown sugar
2 tbsp ketchup
1 tbsp cider vinegar
1/2 cup water
1/3 cup soy sauce
1 tbsp corn starch

Heat oil in large skillet and cook chicken till light brown. Remove chicken.
Add remaining ingredients and heat over medium heat until well blended.
Add chicken and bring to hard boil.
Add cornstarch to thicken sauce if needed.
Reduce heat and simmer for 20 mins uncovered
Serve over hot rice.

Ok I know it looks like a lot of ingredients but I promise you it's easy! And it's so good everyone will be loving you.

Beef and pepperoni soup

Nothing smells better to me then sautéed onions, mushroom and garlic. I love it and it always gets my stomach grumbling. And what's better then soup on a cold winter evening? This is defiantly worth a try.

Beef and pepperoni soup
1 lb ground beef
1 cup pepperonis
Mushrooms
2 garlic cloves
2 tbsps tomato paste
Green onions
28 oz can crushed tomatoes
4 cups chicken broth
1 tsp pepper
Cook ground beef with pepperonis and drain.
Sauté onions, mushrooms and garlic then stir in beef mixture, tomato paste, crushed tomatoes, broth and pepper.
Bring to a boil.
Reduce heat and let simmer for 30 mins
