Ultimate baked beans

Gotta have a throw back to summer by having hot dogs and baked beans. But not just any baked beans. Ultimate ones! Ones you just can't get enough of and these are them!

Ultimate baked beans
2 cans of pork and beans
1/2 cup brown sugar
1/2 cup water
1/2 cup ketchup
2 tbsp mustard
1 tbsp white vinegar
1 envelope onion soup mix
1 lb ground beef browned and drained
1 lb bacon most cooked
Preheat oven to 350 and grease a 9x13 pan
Combine all ingredients except bacon.
Spread out in dish and place bacon on top.
Cover and bake for 30 mins
Uncover and continue to bake for 15 mins

My mom said that the only thing she would change was to cut the bacon up and place on top instead of the strips. They were a little hard to cut up once they were baked on top. But this was for sure a winner. Next summer out first picnic I will be busting out this recipe again.

Cheese tortellini soup

It's fall so it's time for soup! And tortellinis are soooo good! This soup is so easy and quick to make that it almost seems like you missed a step.

Cheese tortellini soup
10oz tortellini noodles
10oz can diced tomatoes with juice
3 sprigs of thyme
Large carrot peeled and chopped
2 celery stalks chopped
4 cups vegetable broth
3/4 cup onion
2 garlic clove
In large pot heat oil on medium high and add celery and carrots. Cool for 2-3 minutes.
Add onions and garlic and cook for another 2-3 minutes.
Add tomatoes with juice, thyme and broth and bring to a boil.
Add tortellini and cook to package directions.
Remove from heat an serve!

See isn't that so easy! It felt weird knowing I was going to make soup for dinner but not starting to make it till last minute! But if your in a time crunch then this is perfect for you!

Monte crisco

So today I went down the easy road. Actually this was just common knowledge I didn't need to get this recipe off Pinterest. My mom and I are huge fans of them and I have been in a lazy mood so these were perfect.

Monte crisco
Bread
Turkey lunch meat
Ham lunch meat
Swiss cheese
Eggs

You want to make 3 pieces of French toast.
And then you layer:
Bread-turkey-cheese-bread-ham-cheese-bread
If you want your cheese melted you can either throw it back in the skillet or use a sandwich press like I did.

My mom likes to dip hers in maple syrup but usually it's served with a honey mustard dip. I served mine with tater tots as you can see because they are simply amazing and you can never have too many!

Chicken and dumplings casserole

This isn't your mommas chicken and dumplings. But boy did it give it a run for its money! It takes a long process of making all those individual dumplings and shortened it up and still you have an awesome meal.

Chicken and dumplings casserole
3 chicken breasts
2 cups stock from the chicken^
2 cups bisquick
2 cups milk
3 bouillon cubes
Cream of chicken soup
Stick of butter
Preheat oven to 350 and you'll need a 9x13 pan.
Put chicken in pan and add enough water to cover chicken. Bring to boil then remove from heat cover with lid and let sit for 15 minutes.
Remove and shred chicken
In bowl mix milk and bisquick.
In another bowl whisk soup, bouillon cubes and 2 cups stock from chicken you just made.
Melt butter and pour in bottom of pan.
Place chicken on top.
Slowly pour bisquick mix on.
Slowly pour soup/stock mixture on very top.
Bake 30 minutes uncovered
Let sit for 5 minutes before serving.

My dad says this does NOT need salt the bouillon cubes add just the right amount. There were no left overs here it was eaten all up. Now turn on some nascar or your favorite football game grab yourself a plate and enjoy. What better way to spend a rainy fall Sunday!?

Cheesy chicken spaghetti

This took some prep time cause of shredding all that chicken. But the cook time is actually pretty quick! It smelled amazing!

Cheese chicken spaghetti
Shredded chicken
Spiral noodles cooked
Cream of mushroom soup
Cream if chicken soup
Canned tomatoes
1/2 cup if water
Onions
1 lb velvetta cheese
Salt and pepper

Spray your crock pot or use a crock pot liner which I've come to love!
Add all your ingredients and cook 2-3 hours.

If you love your crock pot but hate the messy clean up you must invest in the liners. Clean up is a breeze and who doesn't love easy clean up!

Breakfast burritos

My fiancé just started a new job and isn't used to being awake so early because he's used to a night time job. So he's been struggling trying to find quick foods. In attempt to save money and of course be healthy I found homemade breakfast burritos on Pinterest. This is what I used I didn't measure anything and you can change anything up to fit your liking.

Breakfast burritos
Potato
Onion
5 eggs
Cheese
Ham lunch meat
Tortilla shells

Scramble your eggs and set aside.
Cut up your potato, onion, and ham and throw in a pan over medium high heat to cook. When the potatoes are done throw the eggs right in there.
When the eggs are just about finished throw a hand full of cheese on top.
Now I hate cleaning egg and cheese out of pans so I transferred the mixture into a bowl to cool down.
Spread a little mixture in your tortilla shell, add some extra cheese, roll up and cover in plastic wrap.
On my freezer bag I wrote "microwave 2-3 minutes"

Bam! There ya go a weeks worth of breakfast burritos, they taste better then McDonald's and are much cheaper. 5 eggs made 6 burritos but I had the small shells. If you use the bigger shells you probably will only get 3 or 4 out of that many.
