Crock pot French dip

Oh my god this meal was amazing! My fiancé said it gets a platinum star. And it was so simple to make I forgot I was making dinner. If you like those au jus sandwiches you will love this.

Crock pot French dip
Beef roast
Condensed French onion soup
1 small can beef stock
1 tsp garlic powder
Hoagie buns or French rolls (I used hoagie buns)
Cheese-optional
Combine the soup, stock and garlic powder in crock pot.
Add roast and cook for 6-8 hours
Take roast out and set on plate. Cover with tin foil an let sit for 15 mins.
Slice and put back in crock pot for 30 mins.
Serve on rolls and add cheese if you like. Dip sandwiches in juice from the crock pot.

I took my picture half way through eating because I almost forgot. Thank god I remembered because it was scarfed down by everyone faster then I had a chance. This is a must try!

Pork chops in beer

So I was feeling very in the mood to cook yesterday and then everyone showed up at different times for dinner so all that work for nothing. But either way the food was good and everyone ate well.

Pork chops in beer
12 oz of your favorite beer
2 cups ketchup
3/4 cup brown sugar
8 pork chops (I only used 5)

Preheat your oven to 350 and you'll need a 9x13 pan.
Mix together your beer ketchup and brown sugar and pour into the bottom of the pan. Place your pork chops in mixture and bake uncovered for 1 hour.

I made mashed potatoes and honey beer bread to go along with them. The bread was AMAZING!

Crowd pleasure chicken

Again this was a meal you don't stir. More then that your not even supposed to lift the lid. You mix it together put the lid on and LEAVE IT ALONE!! Very simple and lived up to its name.

Crowd pleaser chicken
3 cups cooked cubed chicken
Penne noodles cooked
1/2 cup celery
1/2 cup onions
1/2 cup Parmesan cheese
1/2 cup milk
1 1/2 cups small curd cottage cheese
1 cup cheddar cheese
4oz canned mushrooms
Cream of chicken soup
1/2 cup chicken broth

Spray crock pot
Combine and mix all ingredients in bowl and pour into crock pot.
Cook low 6-8 hours and remember don't touch! No lifting the lid!

No seriously don't touch! It's worth the wait. The smell is amazing and you won't be upset!

Strawberry cream cheese cobbler

So along with dinner I decided to make dessert today. We have 2 things of strawberries and I knew they would go bad if they didn't get used up. And I knew I had this recipe so win win!

Strawberry cream cheese cobbler
1/3 cup butter
1 egg lightly beaten
1 cup milk
1 cup flour
1 cup sugar
2 tsp baking powder
1/2 tsp salt
2 qts strawberries washed and cut up
4oz cream cheese cut into small pieces
Preheat oven to 350 and grease a 9x13 pan
Melt butter and pour in bottom of pan
Mix egg, milk, flour, sugar, baking powder, and salt. Pour over butter but don't stir.
Add strawberries and cream cheese pieces.
Bake 45 minutes!

The smell is AMAZING I love when making food the whole house smells like it. Oh man it's the best!

Crunchy chicken noodle

My mom has a old recipe that she used to make called "chicken shit" no lie that's really what we called it. It used to be a staple in our house and we loved it. But she hasn't made it in years and years. So I came across this recipe and it made me think of that. It's almost like an add on to it came out pretty good.

Crunchy chicken noodle
2 cups chicken cubed and cooked (make as much chicken as you like)
2 cups egg noodles cooked and drained (again make as many noodles as you like)
2 cups shredded cheddar
1 cup frozen mixed vegetables
1 1/4 cup milk
Cream of chicken soup
2 cups Frenchs fried onions

Preheat your oven to 400* and spray a 2 quart baking dish.
Mix together your chicken, noodles, milk, vegetables, soup, 1/2 the cheese and 1/2 the onions.
Bake for 30 mins
Take out and stir. Add the remaining cheese and onions and continue cooking for 5 mins

My fiancé said it reminded him of a chicken pot pie without the crust. All in all they liked it! That's all that matters :)

Pumpkin cookies!

Yes it's finally my FAVORITE time of year! I love everything about fall especially the baking and all the yummy smells. So I know fall doesn't tech. Start till this Saturday but I can't wait any longer. So to pinterest I go!

Pumpkin cookies
1 cup shortening
3 cups sugar
2 eggs
1 large can pumpkin purée 30 oz
1 tsp vanilla
5 cups flour
2 tsp cinnamon
2 tsp nutmeg
2 tsp baking soda
2 tsp baking powder
1 tsp salt

Preheat your oven to 350*
You pretty much just want to throw everything in, in the order I listed above. Seriously it's that easy (as to why I chose it) bake for 10-12 mins. They don't really look done at first but trust me they are!

When you pull these cookies out you instantly get hit with the pumpkin smell and it's amazing if I do say so!

BBQ chicken cornbread

I made this last night for dinner. I'm always loving a good crock pot meal but this one bugged me. I'm a stirrer I have to keep checking my food and always worried. But this you combine and don't touch. So easy yes but a little nerve wrecking. But it smelled amazing and ended up coming out pretty good.

BBQ chicken cornbread
1 lb chicken breasts
18oz bottle BBQ sauce
1 cup frozen corn
1 cup onions
4 oz water
1 medium sweet potato (cubed)
Jiffy cornbread mix (I used 2 boxes)

Spray your crock pot and layer the following
Chicken- sweet potato- corn-onions-BBQ sauce-water
Mix the cornbread according to the box and pour on top.
Put the lid on and cook for 6-8 hours.

The last 20 mins I took the lid off and let it finish without because the one side of the cornbread looked a little mushy and that really seemed to help!

Crock pot sweet chili

So fall is just around the corner and the temp is finally starting to cool so I thought what a perfect night for chili dogs. Off to pinterest I went!

Crock pot sweet chili
2lbs ground beef (I only used 1 pound)
2 cabs kidney beans
4 heaping tbsp brown sugar
1/4 cup ketchup
1/4 cup onions
Can of tomato sauce

Brown your ground beef and drain.
Combine all ingredients into your crock pot and cook low for 2 hours or so.

How easy is that! Grill yourself some hit dogs and get a bag of cheddar cheese and there ya go! Enjoy the fall season!

Beef n biscuits

I made this awhile ago. I just realized I never posted it! I was a little worried this one wouldn't go over to well but actually it got completely ate.

Beef n biscuits
1 lb ground beef
1/2 cup chopped celery
1/2 cup chopped onions
2 tbsp flour
1 tsp salt
1/8 tsp pepper
2 8 oz cans tomato sauce
Biscuits
Shredded cheddar cheese
Preheat oven to 350* and ready a greased 9x13 baking dish.
Cook beef with onion and celery over medium heat and drain.
Stir in flour, salt and pepper.
Add tomato sauce and let mixture simmer for 5 minutes.
Transfer to baking dish.
Arrange biscuits on top (yes on top) of the beef mixture and cover with cheese.
Bake uncovered for 20 minutes.

They loved this! I thought I made too much but they ate it all! That always makes me feel good :)

Meatball sub casserole

1 loaf Italian bread cut in 1 inch slices
8 oz package cream cheese-softened
1/2 cup mayo
1 tsp Italian seasoning
1/4 tsp black pepper
Mozzarella cheese
1 lb frozen meatballs -thawed
28 oz pasta sauce
1 cup water
Preheat oven to 350* and ready a ungreased 9x13 baking dish
Arrange bread slices in single layer in bottom of pan.
In bowl combine cream cheese, mayo, and seasonings. Spread over bread. (don't be afraid to really spread this on!)
Sprinkle half cheese on bread.
In a bowl mix meatballs, sauce and water. Spoon over cheese and bread.
Top with remaining cheese
Bake uncovered for 30 mins.

My dad won't leave me alone about this dish. He wants me to make it again ASAP! His favorite part was the cream cheese mixture that's why I said don't be afraid to really slab that on. As soon as I have this baby I want to make this so I can eat it. It's smelled amazing!

Crock pot Salisbury steak & Mac n cheese casserole

So I've been a little behind on my posting! This past week I got daring and made 2 dishes from pinterest. Usually I only do one! This made a LOT of food so make this if you have to feed a bunch of people.

Crock pot Salisbury steak
2 lbs ground beef
1 envelope dry onion soup mix
1/2 cup Italian bread crumbs
1/4 cup milk
1/4 cup flour
2 tbsp oil
2 cans cream of chicken soup
1 packet dry au jus mix
3/4 cup water
In a large bowl mix beef, onion soup mix, bread crumbs and milk. Shape into 8 patties (mine made 13!)
Heat oil in large skillet. Dredge patties in flour and quickly brown on both sides.
Place patties in slow cooker.
In a bowl mix soup, au jus mix and water. Pour over meat.
Cook for 4-5 hours

2 out of 3 liked this. The boys loved it and want it made again! My mom just thought it was ok.

Mac n cheese casserole
4 tbsp butter
Salt & pepper
Elbow macaroni
2 12 oz cans evaporated milk
1/3 cup milk
2 eggs
1/2 tsp seasoning salt
1/4 tsp garlic powder
2 packs shredded cheddar cheese
1 pack Monterey jack (I used Munster cheese that I shredded)
Preheat 375* and you will need a greased 9x13 baking dish.
Cool macaroni & drain. Add butter and toss.
In a medium bowl whisk milk, evaporated milk, and eggs. Add in seasoning salt and garlic powder.
Combine cheeses in another bowl.
In baking dish place half noodles on bottom, half cheese, the rest of the noodles and the rest of the cheese. Pour your milk mixture over the entire thing.
Bake 35-45 minutes

My mom loved this! The boys not as much. So half and half they liked the whole thing. I was just proud I pulled off two recipes in one meal! I've come a long way!
